Packed with loads of flavors and cheeses, this chicken lasagna would be absolutely perfect to satisfy your craving!
Ingredients:
▪️ 8 lasagna noodles
▪️ 1 lb (2 cups) shredded mozzarella cheese
▪️ 1/2 lb (1 cup) shredded Cheddar cheese (medium)
▪️ White sauce/ Bechamel sauce (made with 1 liter/ 4 cups of milk)
For the chicken mixture:
▪️ 3 tbsp oil
▪️ 1 cup chopped onion
▪️ 1 tbsp garlic paste
▪️ 1/2 tsp ginger paste
▪️ 1/4 tsp oregano
▪️ 1.07 lb (2 cups) ground chicken
▪️ 1/3 cup water
▪️ 1/2 cup chopped tomato
▪️ 1 cup grated potato
▪️ 1 tbsp tomato chili sauce
▪️ 1/2 cup capsicums
▪️ 1 tbsp black pepper powder
▪️ 1/3 cup mayonnaise
▪️ Salt to taste
▪️ Pinch of tasting salt (optional)
For the scrambled eggs:
▪️ 2 eggs
▪️ 1/2 tsp black pepper powder
▪️ 1 tsp onion powder
▪️ 1 tsp green chili
▪️ Salt to taste
▪️ 2 tbsp oil to fry
⚡️ Step one- Scramble the eggs
▪️ Beat the eggs with black pepper powder, onion powder, green chili and salt in a medium bowl until it’s light and frothy!
▪️ Heat the oil well. Add eggs and let those set for a while. Then stir constantly, until large, fluffy curds are formed and eggs are fully cooked.
⚡️ Step two- Cook the chicken
▪️ Heat the oil. Add onion. saute until lightly golden.
▪️ Add garlic and ginger paste. saute until the raw smell is gone.
▪️ Add oregano. saute a bit more.
▪️ Now add the ground chicken and sprinkle some salt on it.
▪️ A few minutes later, add the tomatoes and stir.
▪️ Then add the grated potatoes. Stir again.
▪️ Add about 1/3 cup of water and boil well.
▪️ Add sweet chili sauce when the chicken is nearly done and mix well.
▪️ Add capsicums. Stir for a few minutes more. Don’t wait long, otherwise, the capsicum would become soft - won’t taste great.
▪️ Now add black pepper powder, scrambled eggs and mix nicely.
▪️ At last, turn off the stove. Add mayonnaise and give it a good mix.
⚡️ Step three- Boil the lasagna noodles
▪️ Cook the lasagna noodles following the instructions given in the packet. Add some salts and oil while boiling, remove when 90% done. Rinse with cold water and strain well.
⚡️ Step four- Assemble the lasagna
▪️ Lightly grease the 8*8 inch oven-safe baking dish with butter/ cooking oil.
▪️ Spread a layer of white sauce first. Then place 4 lasagna noodles alongside. The third layer would be the chicken mixture. Next, make another layer of white sauce. Then comes the layer of cheddar cheese and 1 cup of mozzarella cheese.
Repeat the layer of 4 lasagna noodles. Then would be the layers of chicken, white sauce and mozzarella cheese, respectively (Dish will be full) .
Finally, top off with some capsicum and parsley flakes (optional)
▪️ Cover the dish
with foil. To prevent sticking, spray/brush the foil with some cooking oil and make sure the foil does not touch the cheese.
⚡️ Step five- Baking
▪️ Preheat the oven to 350 degrees F
▪️ Bake on the middle rack in the oven for 45 minutes. Half of the time covered and remaining of the time uncovered to allow the cheese on top to turn light golden brown and bubbly.
▪️ Cool it down for 10-15 minutes before serving, so that the layers don’t slide apart.
Notes:
▪️ Coating the dish with sauce, in the beginning, prevent the pasta from sticking to the dish.
▪️ Covering the dish with foil while baking would confine the moisture in.
▪️ Avoid overbaking! Lasagna is not meant to be
crunchy and dry.
