Chingri Malai Curry


We, the Bangalis, are always a great fan of  'Chingri Malai Curry'
And everyone knows, how famous this dish is for its unique taste and flavor!

Undoubtedly, It’s a perfect choice for any celebration!
A seafood lover’s real delight!

So folks Here is my  recipe of ‘Chingri Malai Curry’
Easy to make!

Ingredients:

For marination:

• 500-gram Prawns 
• 1 tsp turmeric powder
• 1 tsp chili powder
• 1 tsp salt
• Oil for frying 

For Cooking :

• Oil
• 2 Cardamoms
• 2 one inch sized Cinnamon sticks 
• 1 big Bay Leaf (approximately 4.5-5 inch sized)
• 1 cup chopped onion
• 1 tbsp ginger paste
• 1 tbsp garlic paste
• 1 tbsp cumin powder 
• 1 tbsp coriander powder 
• 1/2 tbsp chili powder 
• 1 tbsp cashew nut paste
• Salt to taste
• 1/3 cup chopped tomato 
• 1/2 cup coconut cream 
• 1/4 cup shredded coconut 
• Green chilies to taste 
• 1/3 cup chopped cilantro



Directions:

• Clean the prawns well, Try to keep the heads and tails for a better look.

• Marinate with all the spices (see ingredients for marination) for 15 minutes.

• Now turn the stove on.
Put a wok on it.
Pour enough oil, and add all the prawns, when hot. 
Fry until lightly golden. 
Then, put aside on a plate.

• Now, fry the Cardamoms, Cinnamons, and Bay leaf on the same oil.

• When fragrant, add chopped onion.
Saute until golden brown!

• Then, add ginger and garlic pastes, keep on stirring until the raw smell disappears!

• Now, add some water. Also, add cumin, coriander, chili powder, and salt.
Saute for a minute!

• Next, add tomatoes, coconut cream, shredded coconut, and some green chilies.
Saute for few more minutes.

• Now, add the prawns back. Mix well for few more minutes, then add some water.
Keep the lid on. Wait until the desired consistency of the curry is achieved!

• Finally, add some green chilies and cilantro for flavor.
Turn off the stove.
And wait for another 10 minutes with the lid on!

• Serve hot with Polao/ any scented rice! Enjoy!
