Szechuan Shrimp


Calling all shrimp lovers!
Here is my recipe of  'Szechuan Shrimp'- a spicy, delicious and tempting Chinese dish 🔥🍤🌶

Ingredients:

• 1 pound large-sized shrimp, peeled (tails intact), deveined.

For marination:

• 2 tsp soy sauce
• 1 tsp oyster sauce
• 1 tsp black pepper powder
• 1 tsp ginger powder/paste
• 2 tsp garlic powder/paste
• 1 tsp paprika
• 1/2 tsp tasting salt (optional)
• 2 tbsp cornflour/corn starch
• 1/3 cup oil for frying

For making the chicken stock:

• 1.5 cup hot water
• 1 chicken bouillon cube
• 2 tbsp cornflour/corn starch

For cooking:

• 2 tbsp oil
• 1 tbsp chili flakes
• 1/2 cup leek
• 2 tbsp finely chopped garlic
• 2 tbsp finely chopped ginger
• 1/2 cup green bell peppers (julienne cut)
• 1/2 cup red bell peppers (julienne cut)
• 1/2 cup cubed onion
• 6 red dried chili
• 1 tbsp tomato-chili sauce
• 1/2 tbsp soy sauce
• 1/2 cup green onion
• 1/2 tsp sesame seeds (for garnishing)


Directions:


• Mix all the spices with shrimps and marinate for 15-20 minutes.

• Heat up the oil. Fry those shrimps until golden. Keep aside.

• Make the stock now, combine everything and stir well.

• Heat up some oil again, at medium-high flame. Add chili flakes and fry for a bit.

• Now add the leeks.
And the chopped garlic and ginger shortly after.
Saute until fragrant.

• Add bell peppers and onion at this point. Fry for some time more.

• Add shrimps, sauces and red dried chilies. And fry for another minute.

• Now add the stock. Cook and stir until thickened.

• Stir in the green onion now. Turn off the stove.

• At last garnish with some sesame seeds and serve hot with fried rice/ polao/ any kind of steamed fragrant rice of your choices.
