Pistachio Sandesh


Hello, all sandesh lovers!
Let's celebrate this Pohela Boishakh with this easy, super delicious pistachio sandesh and impress your friends and family!
Pistachio sandesh... just melts in the mouth... so smooth and creamy! 😃

Ingredients:

▪️ 1 cup chana/ cottage cheese
▪️ 1/2 cup condensed milk
▪️ 1/4 cup pistachio powder
▪️ 1 tbsp powdered milk
▪️ 1/4 tsp cardamom powder
▪️ Few drops of green food color (optional)
▪️ 1 tbsp ghee


Directions:

▪️ Pour Chana in a bowl.

▪️ Pour pistachios in a plastic bag (better if zip locked). Grind using a pestle. Alternatively, you could use a grinder or a food processor.
However, take extra care not to over-grind. Overground nuts release a substantial amount of oil and end up being a paste, instead!

▪️ Mix all the ingredients in a bowl, but ghee.

▪️ Blend until the texture is smooth enough. If kneading by hand, add the condensed milk later while cooking!

▪️ Now, heat up the ghee in a nonstick heavy-bottomed pan. Pour the mixture in it.

▪️ Cook on low-medium heat until the mixture is thick and dry.

▪️ Stir continuously till the mixture losses out of the pan. Then remove it from the stovetop and let it cool down for a few minutes!

▪️ You can start making your sandesh at your wish, when the temperature falls down, yet warm! You can also create nice designs using sandesh molds.


Notes:

▪️ Grinding the nuts in a zip lock bag would prevent the nuts from releasing the oil, which is essential for dry powders!

▪️ Adding the condensed milk would result in a creamier texture!

▪️ Blending or kneading the mixture is necessary for a smooth texture of the sandeshes.

▪️ Be watchful when cooking the mixture, so that it neither changes its color nor stick to the pan.
